This week we’re spotlighting your favorite pasta dishes. I look forward to the many varieties you’ll come up with. I am so happy to build my collection and your recipes are unbelievable!!! I wish we could taste all of them every Monday when we do our rounds.
Next week’s recipe theme is a favorite Steak Recipe.
Recipe: Angel Hair Pasta with Chicken
Ingredients
- 2 Tbsp olive oil, divided
- 2 skinless, boneless chicken breast cut into 1″ cubes
- 1 carrot sliced
- 1 (10oz) package frozen broccoli florets, thawed
- 2 cloves garlic, minced
- 12 oz angel hair pasta
- 2/3 cup chicken broth
- 1 tsp dried basil
- 1/4 grated parmesan cheese
Instructions
- Heat 1 Tbsp oil in a medium skillet over medium heat, add chicken. Cook, stirring, until chicken is cooked through, about 5 minutes. Remove from skillet and drain on paper towels.
- Heat remaining oil in same skillet. Begin heating water for pasta. Add carrot to skillet; cook, stirring for 4 minutes. Add broccoli and garlic to skillet; cook, stirring for 2 minutes longer.
- Cook pasta according to package directions. While pasta is cooking, adding chicken broth, basil and parmesan to skillet. Stir to combine. Return chicken to skillet. Reduce heat and simmer for 4 minutes.
- Drain pasta. Place in a large serving bowl and top with chicken vegetable mixture.
Quick Notes
You can prepare the chicken and store in an airtight container and store in the refrigerator for up to 2 days before preparing the rest of the meal.
Variations
Substitute one 10oz package frozen peas for the frozen broccoli and 1 cup chopped cooked ham for the chicken. ( I have not tried this).

How did I miss that it was even Monday? The other day? Because I think it's Wednesday. GAH this week has me all confused!
